5 Ingredient Chicken Enchiladas

These delicious one pan enchiladas are perfect for busy weeknights. Just 5 ingredients ready in 45 minutes.

Ingredients
  

  • 1 ½ cup enchilada sauce
  • 4 large flour tortillas
  • 8 oz cheese shredded
  • 1 can black beans
  • 1 cup cooked rice

Instructions
 

  • Preheat your oven to 350. Next, spoon 1/4 cup of the enchilada sauce on the bottom of your casserole dish and spread smooth.
  • Layer with tortillas. Once layered, spread another 1/4 of enchilada sauce on the tortillas then layer with 1/3 of the shredded chicken, 1/3 of the black beans, and 1/4 of the shredded cheese.
  • Repeat the tortillas, sauce, chicken, beans, and cheese layering two more times. Then top with one final layer of tortillas, the remaining enchilada sauce, and the remaining cheese.
  • Cover and place into the preheated oven for 30 min. Remove the cover during the final 5 minutes of baking.
