Blueberry Baked Oatmeal is the perfect weekday breakfast for busy mornings. It can be prepped the day before and served warm or cold for a stress-free healthy breakfast.
Oatmeal is a pretty regular breakfast in our household, so I love finding news ways to serve it rather than just a plain bowl of oats. We love this recipe because it’s full of the delicious blueberries and is a super easy weekday breakfast idea!
The recipe can be made the night before and refrigerated overnight until you’re ready to serve the next morning. Also, I typically always use frozen blueberries for this recipe but you could easily swap them for fresh blueberries.

- Oats: I always use quick-oats, you can also use old fashioned oats which may make the baked oatmeal a bit more dry.
- Eggs: 1 whole egg helps bind the ingredients together and adds a bit of protein.
- Maple Syrup: I love the rich sweet flavor maple syrup adds to this recipe. You could also swap 1:1 with honey.
- Blueberries: Frozen blueberries are my go-to. I love to use wild blueberries, they’re a bit smaller than traditional blueberries and are loaded with tons of flavor. I get them from Costco. Regular frozen or fresh blueberries will work just as good though!
- Milk: I use whole milk, but whatever milk or dairy substitute you prefer will work well.
- Cinnamon, Butter, Baking Powder, Vanilla: Normal baking ingredients.
Instructions
Start your oven and preheat it to 375 degrees before you begin mixing everything together. Then grease a small baking dish with butter. I use an 8×6 baking dish for this recipe.
In a medium mixing bowl, whisk milk and egg together. Once lightly beaten, add maple syrup, vanilla, and melted butter. Whisk all wet ingredients together until mixed.
Next, add oatmeal, baking powder, and cinnamon to wet ingredients. Stir until evenly mixed.
Then, you’ll want to let oatmeal rest for 5 minutes. This allows the oatmeal to absorb some of the moisture before baking.
Once oatmeal has rested, gently fold in frozen blueberries. To keep the blueberry color from bleeding into the oatmeal mixture you’ll want to do this quickly and gently.
Then pour into the greased baking dish. I usually will sprinkle a few extra blueberries on top.
Next, place into your preheated oven and bake for 28-30 min. To check doneness, the oatmeal should puff up once fully set and will appear to have a slightly domed center.
Tips and Variations for Baked Oatmeal
- Not a fan of blueberries? You can easily swap out the blueberries for another favorite fruit. We also love strawberries. If using frozen, I usually chop them into quarters so they cook thoroughly.
- Sprinkling in nuts or some coconut flakes would be great additions.
- If baking the night before, let the oatmeal cool, then cover before refrigerating.
