These 5-ingredient enchiladas are such an easy recipe for any busy night! Layer the ingredients in a large skillet and bake for a quick and easy meal!
Our family loves chicken enchiladas, but sometimes I don’t have time for all of the prep work. I’ve found that this casserole variation tastes just as great, but with so much less work! So next time you’re whole family is craving homemade enchiladas just try it in casserole form!
Ingredients
To start this recipe you’ll need a base of only 5-ingredients: chicken, beans, cooked rice, Colby jack cheese, and red enchilada sauce — either homemade or store-bought sauce will work. To save on time, you can start with a rotisserie chicken, or cook and shred chicken breasts. Then serve with whatever optional toppings you love: black olives, sour cream, corn salsa, and fresh cilantro are some of our favorites..
- Shredded Chicken
- Canned Beans: Black beans or pinto beans
- Cooked Rice
- Shredded Cheese
- Enchilada Sauce
- Tortillas: Flour or corn tortillas
Enchilada Casserole Instructions
Preheat your oven to 350. Next, spoon 1/4 cup of the enchilada sauce on the bottom of your casserole dish and spread smooth.
Layer with tortillas, either flour or corn tortillas will work. The number of tortillas needed to cover the sauce will depend on the size of baking dish and tortillas you use. Once layered, spread another 1/4 of enchilada sauce on the tortillas then layer with 1/3 of the shredded chicken, 1/3 of the black beans, and 1/4 of the shredded cheese.
Repeat the tortillas, sauce, chicken, beans, and cheese layering two more times. Then top with one final layer of tortillas, the remaining enchilada sauce, and the remaining cheese.
Cover and place into the preheated oven for 30 min. Remove the cover during the final 5 minutes of baking.
